Edinburgh Rhubarb & Ginger Liqueur is produced by Edinburgh Gin – a Scotland based spirits company currently owned by Ian Macleod Distillers. They produce a small variety of Gin-based products, including their Classic Gin which I reviewed several months ago.
This particular bottle of Rhubarb & Ginger Liqueur is made using locally sourced rhubarb, ginger, and lemon zest, which are macerated and infused with a gin base.

My Tasting notes
The nose notes of this liqueur had lemon zest in the front, which was more similar to bitter orange than to lemon. There was also a sweet earthiness that must have been coming from the rhubarb. Overall, the aroma was very pleasant and inviting.
I took a sip, and it was very sweet. The rhubarb flavor was straightforward yet delightful. After a few sips, notes of ginger also came out. The ginger was nicely balanced, and not too overpowering.
Cocktail
RHUBARB MULE
❖ 50ml rhubarb & ginger liqueur
❖ 25ml lime juice
❖ ginger ale
garnish: 8-10 fresh mint leaves, 4 wedges of lime
- Fill a highball glass with crushed ice
- Add the liqueur and lime juice to the glass, and top with ginger ale
- garnish with mint and lime wedges
Inside of a cocktail, this liqueur was absolutely delicious. The rhubarb and ginger flavors balanced well with the lime juice, and there was a gentle spiciness to the mouthfeel. The cocktail was overall on the sweet side, but I didn’t find the sweetness to be too much at all. The cocktail really wowed me, which I was not expecting for a simple mule.

This bottle of Edinburgh Rhubarb and Ginger Liqueur really exceeded my expectations, and I think it is one of my favorite liqueurs, out of the spirits I’ve reviewed so far in 2025. The rhubarb notes are delicious, and the liqueur as a whole feels unique and special.
I think it’s a great and versatile choice for a variety of purposes, including for special occasions. I highly recommend trying it out for yourself if you get the chance!
