About Edinburgh Classic Gin

Edinburgh Classic Gin is produced by Edinburgh Gin – a Scotland based spirits company that produces a variety of flavored gins in addition to their original “Classic” London Dry. As a brand, they take inspiration from the city of Edinburgh, in particular the sense of balance between tradition and creativity. 

Edinburgh Gin was founded in 2010 by the family-owned Spencerfield Spirit Company, which has since been acquired by Ian Macleod Distillers. Their new distillery, opened in December of 2024, promises a fully carbon neutral operation.

This particular bottle of Edinburgh Classic Gin is made using neutral grain spirit and several botanicals including juniper, pine buds, lavender, orange peel, lime peel, black mulberries, heather, milk thistle seed, lemongrass, orris, angelica root, and coriander. It is distilled in small batches using copper stills.

My Tasting notes

I took a whiff of this gin, and the aroma was a delicate herbal blend. There was a cleanness to the scent that allowed the botanicals to come into focus.

My first sip felt like a whole journey. The taste was clean in the front with a mixed herbal flavor, followed by a burst of gentle heat, and citrus peel in the finish. The botanicals overall were on the bitter side, but still well balanced and pleasant to taste. Although this gin is fairly dry, it feels quite manageable for people who are sensitive to dryness in spirits. 

Cocktail

Ingredients

  • 2oz gin
  • 1oz lime juice
  • 0.75oz simple syrup
  • 2 dashes angostura bitters

Instructions

  1. Add the ingredients to a shaker with ice, and shake until chilled.
  2. Strain the mixture into a small glass.

Inside of a cocktail, this gin was immediately impressive. The cocktail was very smooth, and I felt that the gin nicely supported the warm notes of the bitters. The gin’s bitter herb notes were nicely balanced with the sweetener and the lime.

RATING: 5/5

At the end of the day, I really enjoyed this bottle of Edinburgh Classic Gin, and I think it is my favorite dry gin to date. I’m generally pretty sensitive to dry spirits, but I found Edinburgh to be well balanced and a great mixing gin. Though I couldn’t really pinpoint the botanicals individually on my palate, the blend was simply delicious. It’s clear that care and attention is given to each batch, and you can tell with each sip.
