About Copalli White Rum

Copalli White Rum is produced by Copalli Rum – a Punta Gorda, Belize based spirits producer. A a company, Copalli aims to create unique rums, while also supporting their social and environmental goals. They take pride in the fact that their distillery is zero waste, employing many practices to repurpose resources during production.

Each rum they produce is “farm to bottle”, with Copalli controlling the process from start to finish at their farm and distillery. They use an heirloom black and red Noble variety of sugarcane, grown without pesticides.

This particular bottle of White Rum is made using fresh cane juice, rainwater, and yeast. It is distilled using both pot still and column still methods, with the distillates blended together before bottling.

My Tasting notes

As I took a whiff of this rum, I experienced a fast montage of tropical aromas one after the other. The scent was overall sweet and interesting, with notes of molasses in the background.

My first sip was soft and delicate on the front of the tongue, with a tingling burst of heat on the back of the tongue. Though the slight harshness made it difficult to identify flavors, there was a softness and sense of depth to the flavor that seemed very promising for cocktails. The mouthfeel was somewhat thick and cushiony.

Ingredients

  • 2oz white rum
  • 1/4oz allspice dram
  • 3/4oz banana liqueur
  • 1oz lime juice
  • 1/4oz simple syrup
  • garnish: slice of banana peel (preferably overripe)

Instructions

  1. Add the ingredients to a shaker with ice, and shake until chilled.
  2. Strain the mixture into a small glass.
  3. Garnish with a piece of banana peel if desired.

Inside of a cocktail, this rum was very tasty and interesting. I did find that the flavor notes were much more noticeable against mixers, and in my mind’s eye I could really picture lush greenery and moss-covered trees.  There were herbal and fruity flavors, alongside a mineral quality that I eventually realized was the rainwater. I could also taste a wood-like flavor in the background that reminded me of the smell of tree bark.

Overall, I really love this bottle of Copalli White Rum. I think that it’s a smooth yet interesting mixing rum that simply tastes great in a cocktail. The unique mineral notes really stand out, and are a memorable feature of the flavor. I appreciate that it is complex, but it also seems very approachable for people who are new to rum.

In addition, I also enjoyed learning about the company’s environmental efforts, and am impressed that the distillery is zero waste. At the end of the day, it’s a company I feel good about supporting. I highly recommend you pick up a bottle of Copalli White Rum the next time you get a chance!
